If you are like us, sometimes you have so many eggs that you don’t quite know what to do with them. After sharing them with family, friends and neighbors and making a quiche or two I also like to hard boil a dozen for later use. One of those uses is creating one of my favorite sandwiches, egg salad. There is something so tasty and satisfyingly rich about a good egg salad sandwich! I have a special take on my egg salad that I am sharing with you today. The secret weapon is cornichon pickles. These miniature French pickles are delicious and can be found in most grocery stores. Here’s the recipe for you to try and enjoy!
6 hard boiled eggs-cooled
1/3 cup mayonnaise~adjust to your personal preferences
2 tablespoons diced sweet yellow onion
6 cornichons~cut into small round “coins”
Salt and pepper to taste
Crusty bread
Dice the hard boiled eggs into bite sized pieces. Add them to a medium mixing bowl.
Next, add the mayonnaise, onion, cornichons, salt and pepper. Mix until everything is well incorporated and coated with mayonnaise.
Spread between two slices of crusty bread.

I like all of the above except the hot sauce, but there is also bacon bits or chopped olives or sprouts.
I like to add some smoked paprika and chiptole hot sauce for a smokey kick.
a tad of curry adds a bit of nutty flavor to my egg salad
I like a little finely diced celery, onion and capers in my egg salad. : )
