Let’s get the hard part over with first. I hug the hefty white rooster close to my chest to keep him calm on the way to the killing station. With one smooth move, I turn him upside down and place him snuggly in the cone. My left hand continues downward to gently extend his neck. I grab the knife with my right hand and swipe off his head. While he bleeds out, I dry my eyes. That’s how a chicken lover has to do it.

Heritage Chicken Cooking Competition

We support heritage breeds because they serve as an important role in the preservation of genetic diversity. Heritage chicken breeds are typically a good choice for a backyard or homestead flock. Heritage breed animals often produce more flavorful meat. But cooking heritage chicken is different than cooking modern industrial chicken.

Chicken-Apple Sausage Fry-Up

Chicken-apple sausage, already fully cooked, is available at most groceries and natural food stores; Applegate Farms makes a great version. You can also experiment with the cheese on this dish; a raw-milk Monterey Jack works well, but so could an aged Gruyère, a smoked Gouda or any of the Dutch cheeses that melt well. This dish has no additional seasoning; the sausage adds all the necessary salt and usually other herbs and spices as well.
